Sticky rice is a dish which you can find in many Taiwanese households. This is one of my personal favorites.
Ingredients:
* Grandma uses the type of measuring cup that comes with a rice cooker, usually designed in the metric system. I just looked it up, 1 rice cup is equivalent of 3/4 cup.
- 3 rice cups* of glutinous rice
- 3 rice cups* of water
- ~1.5 cups of of sliced shiitake mushroom
- 1 cup of pork cubes
- A dash of salt
- 4 tablespoon of soy sauce
- 2 tea spoons of white pepper to taste
- 2 tablespoons of vegetable oil
- A dash of small dried shrimp
- 4 cloves of garlic, minced
- 1 whole onion, chopped
Directions:
- Heat the pan on medium heat. Add oil, dried shrimp, garlic, and onions (pre-fried). Stir.
- Add pork, sticky rice, salt, and 2 tablespoons of soy sauce. Stir.
- Remove the pan from the heat and pour everything into a large mixing bowl. Set aside.
- Add water into the bowl. Add pepper. Cover.
- Microwave for 10 minutes. Add 2 tablespoons of soy sauce to taste. Stir.
- Microwave for 5 minutes. Stir. Microwave for another 3 minutes.
- Set aside for 3 minutes. Serve.
